It is fall, and it is time to add a new creamy, delicious butternut squash recipe to your collection and experience the added immune boosting benefits of turmeric and ginger. This fresh, homemade soup is ready in less than an hour and is perfect on this rainy day.

When fall arrives, we all begin to make foods that are warm and comforting and make use of the fantastic fall produce. Usually, this includes butternut squash, and of course, butternut squash soup.
Whenever possible, I like to create recipes that are healthy, in addition to offering an amazing flavor experience. Butternut squash definitely meets that criteria as it is packed with vitamins, minerals and fiber. To make it amazing, we added a variety of flavors, including immune boosting turmeric and ginger.
Why Add Turmeric and Ginger To Soup?
It is November, and that means it is cold and flu season...in an ordinary year. But, this is 2021, and we are still suffering the effects of the pandemic. Adding immune boosting ingredients to your recipes increases the chances of staying healthy and avoiding illness.
Turmeric has a mild flavor, so it doesn't really change the soup flavor that much; ginger on the other hand, adds a tangy, spicy flavor that great enhances this creamy roasted butternut squash soup. Adding more ginger and turmeric recipes to your collection is a delicious way to support your immune function and thrive.
More immune boosting ingredients that are in this soup include apples, honey, and butternut squash.

Substitutions
The recipe as presented is essentially a vegetarian dish. If you prefer to serve a vegan soup, you can substitute vegan butter for butter. (Coconut milk is vegan.)
Equipment
In order to obtain the smooth, creamy texture that you want for this soup, a stick hand blender is perfect for blending this soup after it is cooked on the stovetop. It is much more convenient to insert the hand blender into the soup pot, than to pour the hot soup into the blender.
If you don't have a hand blender, you can pour the soup into the blender in small batches to create the creamy soup.
Storage
This soup will keep for 5-7 days in the refrigerator, and is great to take for lunch or for left overs. If you are going to freeze this soup, do it on the first day so that you have the freshest flavor.
Top tip
Remove any ginger, turmeric or clove solids before blending the soup.
