Instructions

Cook 4 pieces of bacon to golden brown, not crispy. Set aside.

Get three mixing bowls. In the first one place the flour and Cajun spice . The second, beat the eggs to create an egg wash and in the third, the panko bread crumbs and parmesan cheese.

Dip your chicken breasts into the flour and coat on both sides. Shake off excess flour. Dip into egg wash and then into the panko and parmesan mixture. Press firmly to heavily coat the chicken breast and set aside.

Place oil in a skillet and fill to about a ¼ inch in the pan on medium high heat.

When oil is heated, add breaded chicken breasts and cook 3-5 minutes on both sides. Place chicken on a cooling rack and allow to drain over paper towels.

Build Your Sandwich

On the bottom slice, place a swirl of avocado dressing or guacamole. Add spinach, tomato slices, onions, 1 breaded chicken breast and 2 slices of bacon. Top with more avocado dressing or guacamole across the top of the bacon slices followed by a drizzle of balsamic vinegar and other slice of bread.

Variations

You can create many variations of this sandwich by changing the ingredients that you use to build your sandwich with the chicken parmesan. Of course, it must have the chicken parmesan, or it isn't a chicken parmesan sandwich. The other ingredients, however, can be anything.

  • For greens, you can add kale, butter lettuce or iceberg lettuce.
  • For onions, you can use fried onions, onion rings, or pickled onions.
  • For sauce or dressing, the possibilities are endless. You can use hot sauce, ranch dressing, pesto, or bbq sauce.
  • Add your favorite sandwich ingredients--pickles, peppers, avocado--whatever will make it amazing when you bite into it.

Storage

The chicken breasts, egg wash and panko cheese mix will keep in the refrigerator for 3 days, but do not coat, dip and prepare the chicken for frying until you are ready to cook it.
