This recipe starts with coating the chicken with olive oil, combining simple, but flavorful spices to create a Greek flavor inspired rub to season the chicken, and then baking the chicken until it is juicy and tender. While the chicken is cooking, we then chop fresh tomatoes, cucumbers, feta cheese and red onion. All of these ingredients together make for the best of fajitas in a pita.
What really make this pita great, is the layers of flavor that happen when you then top the chicken and vegetables with the Basil Vinaigrette and Greek Yogurt Crema. I can't tell you anymore about how delicious this is--you just have to try it for yourself. We made this on Monday when we shot the video and photos, and after looking at all the photos, I am going to make it again right now.
Ingredients
Like with most recipes, the spices give it the flavor, and in this case, we have so many great flavors combined in this pita. First, for the chicken, we combined:
Greek Chicken
- Smoked Paprika
- Greek Oregano
- Salt
- Pepper
- Granulated Garlic
- Olive oil
- 4 chicken breasts
Creamy Basil Vinaigrette
- Extra virgin olive oil
- Red wine vinegar
- Fresh garlic
- Greek oregano
- Shallot
- Fresh basil (pack the measuring cup)
- Lemon juice (fresh squeezed)
- Honey
- Salt and pepper
- Creole mustard
Greek Yogurt Crema
- Greek yogurt
- Lemon juice
- Greek oregano
- Lemon zest
- Salt
Additional Ingredients
8 fresh pitas
2 cups of chopped tomatoes
2 cups of chopped cucumber
1 cup of chopped feta cheese
1 red onion, minced
Fresh thyme
While this may seem like a lot of ingredients for a pita, the good news is, you can use these recipes to create many other fantastic dishes.
