To create this delicious dish, we combined the perfect ingredients--fettuccine, roasted chicken, Andouille sausage, juicy shrimp and a homemade, creamy Cajun alfredo sauce. The results are delectable. The best part? You can be enjoying this creamy pasta in 45 minutes.

Alfredo Pasta is definitely one of those dishes that qualifies as an indulgence. Seriously, this dish is better than any restaurant alfredo, and it is perfect when you want to impress. The secret to the flavor in this pasta is our special Cajun Fire Spice blend, which gives it just the right amount of fire and kick to be delicious.
After tasting this pasta, we think that you will immediately add this to your favorite recipes collection, and that you are going to want to make it again and again. And take it for lunch, and have it for left overs. It is that good.
Ingredients
Cajun Fire Spice (recipe below)
fettuccine pasta
olive oil
kosher salt
butter
whipping cream
½ and ½
garlic minced
salt
pepper
fresh parmesan cheese (grated)
andouille sausage cut ¼” bias
chopped cooked chicken
shrimp, deveined and peeled
chopped flat leaf parsley
Cajun Fire Spice
kosher salt
cayenne pepper
black pepper
white pepper
onion powder
paprika
cumin
oregano
dried thyme
Instructions
For Cajun Fire Spice
In a covered container or sealed plastic bag, combine all spice ingredients and shake until mixed.
In a dry hot skillet, add 2 tablespoons of the Cajun Fire Spice and allow spices to heat up and slightly smoke. Next, add 1 tablespoon of olive oil and the andouille sausage. Cook until the oils leach on to the pan, then add shrimp and chicken and coat well with spices and sausage oils.
For Alfredo Sauce
In a separate sauce pot, melt the butter, add the whipping cream and half and half. Simmer on low heat for 2 to 3 minutes.
Stir in the garlic and two tablespoons of the Cajun Fire Spice. Slowly whisk in 2 ¼ cups Parmesan cheese until the sauce thickens.
Add the sausage, chicken and shrimp to the sauce, and stir well.
For Pasta
Add 6 qts of water, 2 tablespoon of olive oil and 2 tablespoon of kosher salt to a large pot and boil the water. Add pasta to the boiling water and cook until al dente, approx. 8 minutes. Strain the pasta in a colander, rinse with cold water and mix one tablespoon of olive oil into pasta. Set aside.
Add the Cajun alfredo sauce to the drained pasta.
Plate the pasta to the center of the serving dish and mound it with a fork. Top with Parmesan cheese, fresh flatleaf parsley, and dust the plate with Cajun Fire Spice.
Substitutions and Variations
- This recipe includes, chicken, sausage and shrimp, but there are many options for a delicious meal with (only) the Cajun alfredo sauce and pasta. The key to the flavor in this recipe is the special blend Cajun Fire Spice.
- We actually served this recipe to friends who are vegetarians and pescatarians, and we were able to satisfy each of their dietary preferences by eliminating the shrimp or chicken and sausage for their portions.
- To add more protein to this dish for a vegetarian, you can substitute an equal portion of tofu for the meats and shrimp.
- To make this recipe gluten free, use gluten free pasta.
Storage
Store Cajun Fire Spice out of light in a sealed container. It will last about two months.
Top tip
Cook the alfredo sauce slowly on low heat to allow it to thicken as you stir in the Parmesan cheese. This is not a sauce to rush.
The Cajun Fire Spice is a great all-around seasoning for eggs, fish, and meats.
