Ingredients

  • 3 lbs red potatoes, chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 6 cloves garlic, minced
  • 1 red onion, minced
  • 2 tbsp chopped rosemary
  • ¼ cup sweet paprika
  • 2 oz butter ½ stick

Instructions

  • Add olive oil to pan and place on stove, medium heat.
  • When oil gets hot add potatoes, season potatoes with pepper and salt. Flip or turn potatoes . The secret with cooking many vegetables, it is important not to wait until the end to season them.
  • As the potatoes begin to soften, add onions, garlic, rosemary and paprika. The potatoes need to be coated with oil to collect the onions and spices. Flip or stir to coat potatoes.
  • Add butter, and additional salt and pepper if needed according to your preference.

Notes

Do not overcook the potatoes so that they become mushy.  Fry just until tender and crispy.
